Classic Shortbread
1 c. butter* (room temperature)
1/2 cup icing sugar
1/4 tsp. vanilla extract
1 3/4 c. flour
1/4 c. cornstarch
pinch salt
Turn on the oven and preheat to 350. Beat the butter until soft and light (a couple minutes). Add icing sugar and vanilla and beat to combine.
Mix the flour, cornstarch and salt together in a separate bowl. Add this to the butter mixture and beat until you have a soft, smooth dough.
Line a pan with parchment and press in the dough. Top with sprinkles or coarse sugar if you like.
Bake for 20-25 minutes until the shortbread is set and the edges just start to brown.
*Baking time will depend on the size of your pan and thickness of the shortbread. My pan is 6x8” and took around 24 minutes.
Let cool in the pan for 5-10mins. Then cut while still warm and put on a wire rack to cool.
